Fruit bars

These are amazing and the kids enjoyed them too. I made some with pear in the hope they were failsafe but after i made (and served them) i remembered they had cornflour, so if anyone know what failsafe substitute i could use please let me know. The cornflour in the supermarket is actually made from wheaten flour so this may be an option.

I got the idea from my best friends sister asking about them on the thermo forum ;) (thanks mandi!)

Pastry
125g butter
50g sugar
1 egg
260g flour
2 tsp baking powder
a little milk
Filling
500g fruit I used apricots for one batch and pears for the other
60g water
juice 1/2 lemon or a little citric acid in water
1 tbsp golden syrup
40g flour
Put fruit, water, lemon juice, cornflour and syrup into bowl 100C 5min sp 2-3 (add extra water if starts to stick)
Put aside to cool.
I think I added a bit too much cornflour (which i dont even think is failsafe?)
Cream butter and sugar. Add egg and beat well.
Add flour and bring together at sp 4
Add a little milk and mix reverse 30 sec will come together into a ball of pastry.
(I actually got distracted and added all the pastry ingredients at once and mixed without creaming or anything first and they turned out great ;)
Divide Pastry into 3 and roll into long sauge shape and flaten out.
Spread filling down middle of pastry.
Fold pastry in to form 'sausage roll' shape
Bake in 180C for 30 mins.

sauce, and stuff

I have been way out of the loop but today i gave bimbi a good work out,
I made this sauce, and to be honest its green and very unappealing but it tastes ok, and the DS ate it so it must be ok.
Failsafe tomato sauce substitute:
1/2 Leek (The green half)
50g Butter
1 850g tin of pears drained.
100g Brown sugar
2tsp Citric acid

Chop Leek speed 7 for 3-5seconds.

Add butter, Saute 2 minutes 100C speed soft. (MC OFF).

Add all other ingriedients. Mix speed 4-5 10-20 seconds.

Simmer 15 minutes 70C speed soft. (MC in)

Puree by slowly turning up to speed 9 for 30-40 seconds.

Place in jars and keep in fridge.

I will add some pics at a later date ;).

Bacon mushroom cabonara

150g fettuccine
450g warm water
200g thick cream
3 rashers bacon
6 or so mushroom cups sliced
1 tsp crushed garlic

1 beaten egg

Grated cheese
To Prepare:
Grate cheese speed 5 to 10, keep aside.
Place all the ingredients in Tmx except the egg and program 15 mins, temp. 100ยบ, speed 1, reverse speed.
2 mins before the end, pour egg through the hole. Pour into serving dish, turn it upside down and turn the black screw part of the bottom of the blades, back and forth and all the pasta will fall out easily. Sprinkle cheese over the top.

I actually scorched the bottom of my tmx, which means i either cooked it too long or didnt have it on a high enough speed, so need to try it a few more times and see. and no photo as i basically inhaled it it was so good!!

ETA: just remade it without mushrooms, as I was out of them lol cooked on speed 1 and didnt stick or scald so will amend recipe

So I did these up for lunch the other day, very tasty :)
Do a pizza dough like here then add some blitzed up garlic and rosemary, and good splash of oil and a good pinch of sea salt :)
Very tasty indeed.
