"chickens balls"

I know its a bit cheeky, but sometimes you have to name them anything just to get them down the hatch ;)
these are a take on the hors-d'oeuvers in the EDC

Handful of parsley
2 spring onions
1 clove of garlic
500grams of chicken cubed and very cold or even semi frozen. (I used 2 thigh fillets but you can use breast)
60 grams of bread crumbs (you can make these yourself to be sure they are failsafe)

Place garlic, shallots and parsley in bowl and chop for 5 seconds speed 9
add chicken and mince 8 seconds speed 7
Add bread crumbs and mix for 5 seconds speed 6

Roll into small balls and bake in a pre heated oven (180' fan forced, 200' non fan forced) for 20 mins. you might need to turn them once during cooking. once they are brown and cooked through, serve with rice or cous cous.

"Fried Rice"

Adapted from quirky's recipe

Put the basket in thermo and weigh out 400grams of rice, remove from thermo and rinse.
Add 900 grams of water to the bowl. (if you can tolerate a little coconut milk you can replace some of the water for this, up to 400 grams)

Return the rice basket to the tmx and cook at varoma temp speed 4 for 2o minutes.

To the varoma add 100-200 grams of cubed chicken
and a mix of veges: spring onions, leeks, celery, beans, peas, brussel sprouts, shredded cabbage, cashews, whatever you have on hand and can tolerate.

When there's about 5 minutes left on the timer, line the top Varoma tray with a piece of wet baking paper, and pour in 4 to 5 eggs, whisked. Replace lid, and leave to steam.

Then serve, we pour the rice into a large salad bowl and add the chicken and vegies then slice the egg and add that, then toss all together and serve up!

Lasagne- Failsafe

Ok so this might be a really simple adaption of the classic lasagne, but I thought I'd blog it anyway.

Take 500grams of mince (or mince your own)
2 spring onions (mostly white a little green)
1 clove of garlic
1tblsp canola oil

Mince up onion and garlic in thermo, speed 9 5 seconds,
add mince and oil and cook for 12 mins 100' reverse speed soft

Set aside.

Make a batch of the bechemal sauce from the EDC
(500 grams milk, 50 grams butter, 50 grams flour and a pinch of salt, 7 mins 90' speed 4)
add half a batch of the garlic and herb dip and mix thoroughly

Then add a thin layer of mince to your dish, top with a fresh lasagne sheet, then mince, then 'cheese' sauce mixture, then a lasagne sheet, continue, with the top layer being just 'cheese' sauce.

Bake at 180' for 30 mins, until the top is golden brown.

Popcorn alternatives for failsafe

Spread thick rice cakes with nuttelex, pop in oven til hot and crunchy then crumble and salt! (you could also sprinkly icing sugar instead of salt for a sweet treat)

OR

For a more candied/caramel popcorn treat:
Take 2 cups white sugar and 1/2cup water with 1tsp nuttelex or butter, add to a pan and allow to come to a slow rolling bubble DO NOT STIR!
There will be lots of bubbles at first but after 5-10 mins the bubbles will diminish, this is the final stages of the butterscotch and will need to keep a close watch over it now.allow the mixture to become golden. turn off the heat but leave on the hotplate. Add some pre crushed rice cakes (dont crush them too small though) mix with a wooden spoon until all rice cake bits are covered.
Once covered pour onto a baking tray lined with baking paper and allow to harden, then when cool break up and enoy :)

Rice bubble cookies



115g butter/nuttlex
3/4 cup sugar
1 egg
1 1/4 cups self raising flour
pinch salt
1 1/2 cups rice bubbles

Pre-heat oven to 180'
Cream Butter and sugar in tmx for 30-40 seconds speed 4
Add egg,flour and salt, combine on speed 4 for 10 seconds
Mix in Rice Bubbles, combine reverse speed 1 for 30 seconds
Place spoonfuls onto greased oven tray.
Bake at 180' until golden

sweet and salty nuts

This is taken from Quirky Jo's blog, very easy failsafe adaptation for those that can tolerate cashews. For those very sensitive no more than 10 cashews should be eaten a day... so it might be hard to stop at 10!
Use cashews, salt and maple syrup then follow Jos lovely tips and you will have a yummy treat, but be sure to share them!

Pear glazed chicken meatballs

500g chicken minced in TMX
2 garlic cloves,
2 shallots,
1/2 cup peas
parsley,
salt to taste
egg
flour to combine (about a cup- a cup and a half, Ive also heard you can use rice bubbles or rice flour)
2 tbsp canola oil or butter
2 tbsp homemade pear jam or golden syrup

Blitz garlic shallots and parsley in tmx on speed 9 for 10 seconds
Combine mince, garlic, shallots, peas, parsley, salt, egg and enough flour to combine in tmx reverse speed 3 for 10 seconds then roll into walnut-size balls.
Shallow fry in hot oil.
Remove meatballs from frying pan. Reduce heat and put pear jam in pan, stirring until it caramelises (be careful not to burn), put meat balls back in pan and glaze gently with jam, again being careful not to burn
